INGREDIENTS

  •  500g beef chuck, cut into bite-sized pieces
  • 2 tablespoons olive oil

  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric

  • 1 can (400g) diced tomatoes

  •  1 cup frozen peas

INSTRUCTIONS

 Step 1: Prepare the Beef

  1.  Heat 2 tablespoons of olive oil in a large pot or tagine over medium-high heat.
  2.  Add the beef pieces and brown them on all sides until golden brown. Remove the beef from the pot and set aside.

 Step 2: Cook the Aromatics

  1.  In the same pot, add the chopped onion and cook until softened and translucent, about 5 minutes.
  2.  Stir in the minced garlic, grated ginger, cumin, coriander, turmeric, paprika, cinnamon, and saffron (if using). Cook for 1-2 minutes until fragrant.
