This recipe combines the sweetness of raisins, the crunch of toasted almonds, and the warm aroma of cinnamon to create a deliciously versatile dish. It can be served as a sweet dessert or paired with meat or chicken for a savory main course.





 Ingredients

 For the Couscous:

  • 2 cups fine couscous (preferably Moroccan-style)
  • 3 cups water or light vegetable broth
  • 1/4 cup unsalted butter or olive oil
  • 1/2 teaspoon salt (adjust to taste if using broth)


For the Sweet Ingredients:

  • 1/2 cup golden raisins
  • 1/2 cup slivered almonds, toasted
  • 1 teaspoon ground cinnamon
  • 2 tablespoons honey or maple syrup (optional, for extra sweetness)
  • Zest of 1 orange (optional, for added fragrance)
  • 1 tablespoon orange blossom water (optional, for authentic flavor)

  • Powdered sugar




Instructions

 Step 1: Prepare the Couscous

  1. Toast the Couscous (Optional but recommended): In a large dry skillet over medium heat, toast the couscous for 2-3 minutes until it becomes fragrant and slightly golden. This step enhances the nutty flavor of the couscous.
  2. Bring 3 cups of water or broth to a boil in a saucepan. Once boiling, remove from heat and stir in the couscous, butter (or olive oil), and salt. Cover the pan with a lid and let it sit for 5-7 minutes, allowing the couscous to absorb all the liquid.
  3. Fluff the couscous gently with a fork to separate the grains and prevent clumping. Set aside.




Step 2: Toast the Almonds

  1. In a small skillet over medium heat, toast the slivered almonds until they are golden brown and fragrant, stirring frequently to avoid burning. Remove from heat and set aside.



 Step 3: Combine the Ingredients

  1.  In a mixing bowl, combine the fluffed couscous, raisins, toasted almonds, ground cinnamon, and orange zest (if using). Mix well to distribute the ingredients evenly.
  2.  Drizzle with honey or maple syrup for additional sweetness, and add a splash of orange blossom water for an aromatic touch. Toss gently to incorporate.

  1.  Transfer the couscous to a serving platter or individual bowls. Sprinkle with powdered sugar and garnish with fresh mint leaves for presentation.
