Tfaya Couscous Recipe

Tfaya Couscous is a sweet and savory Moroccan dish that combines fluffy couscous with caramelized onions, raisins, and warm spices like cinnamon. It’s often served with chicken or lamb. Here's a recipe for you to try:

 Ingredients:

For the Tfaya (caramelized onion topping):

  •  4 large onions, thinly sliced
  •  2 tablespoons butter or olive oil
  •  1 teaspoon ground cinnamon
  •  1/2 teaspoon ground ginger
  •  1/4 teaspoon turmeric (optional)
  •  1/4 teaspoon ground black pepper
  •  1/2 cup golden raisins or sultanas
  •  1 tablespoon honey (optional, for extra sweetness)
  •  1/4 cup water
  •  Salt to taste

For the Couscous:

  •  2 cups couscous (medium or fine grain)
  •  2 1/2 cups warm water or broth
  •  1 tablespoon butter or olive oil
  •  1/2 teaspoon salt

Optional Protein:

  •  Cooked chicken, lamb, or beef (seasoned with Moroccan spices)

 Instructions:

1. Prepare the Tfaya:

  1.  Heat butter or olive oil in a large skillet over medium heat.
  2.  Add the sliced onions and cook slowly, stirring occasionally, until they caramelize and turn golden brown (about 20-25 minutes).
  3.  Add the cinnamon, ginger, turmeric, black pepper, and a pinch of salt. Stir to combine.
  4.  Add the raisins, honey (if using), and water. Simmer for 10-15 minutes until the mixture is thick and fragrant. Set aside.

2. Prepare the Couscous:

  1.  In a large bowl, place the couscous and drizzle with butter or olive oil. Mix well to coat the grains.
  2.  Pour warm water or broth over the couscous, cover the bowl with a lid or plastic wrap, and let it sit for 5-10 minutes until the couscous absorbs the liquid.
  3.  Fluff the couscous with a fork to separate the grains.

3. Assemble the Dish:

  1.  Spread the fluffy couscous on a large serving platter.
  2.  Top with the Tfaya (caramelized onion and raisin mixture).
  3.  If using, arrange cooked chicken, lamb, or beef on the side or over the couscous.

4. Serve:

  •  Serve warm, garnished with additional cinnamon or toasted almonds if desired.

Enjoy your Tfaya Couscous! It’s a perfect balance of sweet and savory flavors, and it’s sure to impress! 😊
