Classic Moroccan Chicken Tagine Recipe

 


Ingredients:

  • 1 whole chicken (cut into pieces)  
  • 2 onions (finely chopped)  
  • 3 garlic cloves (minced)  
  • 1 tsp ginger  
  • 1 tsp turmeric  
  • 1 tsp cumin  
  • 1 tsp paprika  
  • 1 pinch saffron (soaked in water)  
  • 1 preserved lemon (quartered)  
  • 1 cup green olives  
  • 2 tbsp olive oil  
  • Fresh cilantro & parsley (for garnish)  
  • Salt & pepper to taste  

 

Instructions: 

  1. Marinate the Chicken – Mix chicken with spices, garlic, and olive oil. Let it sit for at least 30 minutes.  Sauté Onions – In the tagine pot, cook onions until soft.  
  2. Brown the Chicken – Add chicken pieces and sear lightly.  
  3. Slow Cook – Add saffron water, preserved lemon, and olives. Cover and simmer on low heat for 1.5 hours.  
  4. Garnish & Serve – Sprinkle fresh herbs and serve with warm Moroccan bread or couscous.
